Red Cherry cheesecake Brownie Recipe (John Morley Red Cherry Fruit filling)

Our talented baker Adam Davies finds a creative use for Zeelandia's John Morley Red Cherry Fruit Filling, in this Red Cherry Cheesecake Brownie Recipe.

Ingredients 

For Brownie Mix 

150g Dark Chocolate, 150g Unsalted Butter, 3 Large eggs, 250g Caster Sugar, 75g Plain Flour, 40g Cocoa Powder

For Cheesecake Mix 

200g Cream Cheese, 50g Granulated Sugar, 1 Large egg ,150-200g of John Morley Red Cherry Fruit Filling (use as much as you'd like) 

Recipe

Preheat oven to 180°c (Deck oven)

Tin size is: 18x26cm (greased and lined with silicone paper)

1.Melt dark chocolate and butter together until combined (allow to cool below 45°c)

2.Whisk together eggs and sugar, in a mixer with a whisk attachment. Until light and fluffy (approximately 6 minutes fast)

3.Pour the chocolate mixture into the egg mixture and fold in gently using a large metal spoon.

4.Sift in the flour and cocoa and fold together until combined.

5.Pour ¾ of the batter into the lined tin and spread evenly

6.Whisk all ingredients for cheesecake together and gently pour over the brownie batter.

7.Drop the remainder of the brownie batter and some red cherry filling, randomly onto the batter. (Put as little or as much filling as you want into the mix)

8.Bake for 30 minutes approximately

9.Allow to cool completely before removing from tin or slicing.
