Latest Bakery Trends
during London Bakery Tour.

At Zeelandia UK, our bakery ingredients brands are crafted with insight and expertise from all around the globe (Royal Zeelandia Group) while tailored to local tastes and flavour profiles.  

While we value the insight from our global partners, we know that the best research can come from getting out and exploring the wonderful treats our UK bakeries have to offer. 

At the end of last year our New Product Development and Marketing teams headed to the streets of London, home to over 5,000 Craft Bakery Cafes and Artisan Baker & accounting for almost one-fifth of the UK bakery market.  

Festive Finds  

As anticipated in November, the bakeries we visited were full of traditional festive bakes, including mince pies, Christmas cakes and panettone.  

While we saw a lot of flavour diversity in retail ranges in 2024, such as sweet additions like marzipan and caramel,  we noted in the craft bakers that many focused on a more artisanal bake with deep filling and rustic lids. Taking inspiration from the many mince pies we tasted, we enjoyed creating some fantastic new mincemeat recipes to present to our major customers and retailers ready for Christmas 2025. 

 

Next stop was Covent Garden’s Dolce VyTa, where we were inspired by their ‘Reindeer Maritozzo’, a creative take on an Italian classic. You can learn how to make delicious Maritozzo with Zeelandia’s Gamma Select and Ovex RTU Glaze here 

 

Scrumptious Doughnuts  

We were very excited to explore the fantastic range of Doughnuts from Donutellier and BREAD Ahead Bakery, and it was clear to see how indulgent this sector of the market remains.  

Toppings were a key focus on these Blackcurrant Cheesecake Doughnuts and luxury Pistachio Doughnuts and Praline Doughnuts from Bread Ahead. Going forward into 2025, the principal of over filling and flavour layering remains a key trend. 

 

However they weren’t the only bakery with a Pistachio focus, and we were inspired by the Pistachio Raspberry Doughnut from Donutellier, alongside their Pistachio cream croissant. Flemings smooth or seeded Raspberry Jams and John Morley Raspberry Fruit Filling go perfectly with Pistachio fillings for a wide range of delicious bakes. 

 

It is clear there is a real focus on aesthetics for these bakes, but it was also interesting to see creativity in branding products for virality, such as Doughnut time’s Mint Aerosmith, Kinder Jenner and Bruno Mars Doughnuts.  

 

Fresh Fruity Flavours 

With our market leading John Morley Fruit Fillings we were also delighted to see bakes featuring a range of seasonal fruit such as Blueberries, Apples, Plums and mixed berries.  

Examples of these included Blueberry & Custard Brioche and a range of fruity Crumble Cake Bars.
